I feel like I should be sending a farewell to summer. The air outside has cooled. Labor Day is upon us. The school year has started. And the grocery stores are already decked out with 4 aisles dedicated to Halloween candy. So, what better farewell to summer than one involving food? With the last of our strawberries this year, we decided to throw them into a nice refreshing salad. I absolutely love the combination of savory and sweet. In this salad there are strawberries and blueberries for the sweet fruit flavor, feta for a yummy savory taste, and walnuts to add in some crunch. I really love salads and this is one of my top choices – just add some raspberry vinaigrette to top it off! We just started a salad group at work and so I have been inspired by many salads lately. I love that there are so many tasty combinations to try. So…here’s to another tasty salad! I hope you enjoy this Strawberry Summer Salad as much I do.
- 4 cups fresh spinach leaves
- 10-15 medium sized strawberries, cut in halves
- 1/3 cup dried blueberries (or crushed fresh blueberries)
- 1/2 cup crumbled Feta cheese
- 1/2 cup walnuts
- 1/2 small red onion, sliced into 2″ long strips
- 1/3 cup red raspberry vinaigrette
Preparation: In a large bowl add all ingredients and toss with vinaigrette and serve.
The Fresh Fridge Tip: For a less messy way to serve salad, refrigerate the mixed salad (no dressing) in a large Ziploc bag. When ready to serve, add dressing to the bag and toss. Then transfer the contents to individual serving plates. The best part is there is no messy salad bowl to clean up!
