Healthy Ground Turkey & Brown Rice Bowls

As a kid one of my favorite meals to eat after I came home from working up a sweat at basketball practice was a delicious (and quick!) combination of ground beef and rice bowls. They always gave me the re-energizing I needed after a work out and filled me up quick. So, as I have grown up that meal has stuck with me. But, of course, I wanted to get a little creative and make my own spices and see if I could make it even healthier to really get some great nutrition after my work outs. (Thanks New Years Resolutions!) So here is my new take on my old family favorite. Enjoy!

Healthy Ground Turkey & Brown Rice Bowls

Ingredients:

  • One package brown rice (1 cup cooked)
  • 20 oz. lean ground turkey
  • 1 tablespoon extra virgin olive oil
  • 3 teaspoons garlic, diced
  • 1 shallot, diced
  • 3 tablespoons white wine vinegar
  • 1 tablespoon hot sauce
  • 1 tablespoon mild chili powder
  • 1 teaspoon Kosher salt
  • 1 tablespoon fresh rosemary, chopped
Directions

1. Heat a large skillet to medium heat and then add olive oil, diced garlic & diced shallot – cook for 30-45 seconds.
2. Add ground turkey and stir. Cook until turkey is browned, almost no pink.
3. In a small mixing bowl, mix together white wine vinegar, hot sauce, chili powder, and salt.
4. Drain turkey fat from skillet and then add the chili/vinegar mixture.
5. Coat the chili and cook until turkey has all been cooked through.
6. Turn heat to low and immediately add chopped rosemary. Stir until the turkey is fully cooked.
7. Cook the brown rice separately.
8. When both are done, mix turkey mix and rice together and serve.

    So easy! Thank you for this. Also needed something with tons of protein but none of the bad stuff for workouts and I am terrible at cooking. This was delicious. I chopped up some peppers and threw them in too! Didn’t have to buy tons of weird stuff to make it either. Perfection!

  3. That seems like a lot of liquid if I am reading right, .75 is 3/4 cup ? Right so 3/4 c honey, coconut amigos and water?
